In 2002, LEEZEN approached 福義軒 (Fu Yi Xuan) — a traditional biscuit manufacturer in Chiayi with over 50 years of experience — with an unusual request: remove the artificial colours, flavours, quality improvers, hydrogenated fats, ammonium bicarbonate, and baking powder from the recipe. The master bakers, with over 30 years of experience each, initially had no idea how to do it — these additives were considered essential to the biscuit-making process. After countless trials, adjustments to baking time, temperature, and even the mould design, they succeeded. The 胚芽餅 (Wheat Germ Cracker) that resulted went on to become one of LEEZEN's most enduring bestsellers and helped establish the "less or no additives" biscuit movement in Taiwan.
